Banana Chocolate Chip Loaf

The oven didn't get a rest today between baking, cooking for Gilby and normal family meals.
Madi and I decided to make a banana loaf recipe from the Baking for kids by Linda Collister.

(She's smiling because I told her to stay still and pretend she was still sifting flour.)

Apparently she is old enough for the cutting tasks now, I remain apprehensive....

Every time I turned around she was in the chocolate chips. Save some for the cake Madi!

From the kitchen today...

It went down a treat, they ate all but one slice between them.
Here's the recipe.

250g plain flour
1 teaspoon baking powder
a good pinch of salt
75g light brown sugar
75g caster sugar
100g butter plus extra for greasing tin
2 large free-range eggs
250g peeled ripe bananas (2 big ones)
75g plain choc chunks or chips
(We used a bit more chocolate ;o)



900g loaf tin, greased and lined.

We used our silicon loaf tin for the first time, and just sprayed it with a bit of oil. The cake popped out no problems at the end.

1. Pre-heat the oven to 180C (350F) and prepare your tin.

2.Sift flour, baking powder and salt. Add the sugars and combine well with a wooden spoon. Make a well in the centre.

3. Melt butter in a saucepan or microwave. Break eggs into a small bowl and break them up slightly with a fork.

4. Add the melted butter and the eggs to the flour mixture.

5. Mash the bananas with a fork, not too much, you want it lumpy, not pureed.


6. Add bananas and chocolate chips to the well in the bowl.


7. Mix all the ingredients until you cannot see any flour.

8. Spoon the mix into the tin and bake for 55 minutes, or until golden brown and the skewer comes out clean. Cool.

It will keep in an airtight container for 5 days....if it lasts that long!

*I* baked choc chip muffins yesterday, you know. My photos, if I had taken them, would show me dumping Betty Crocker out of a box, into a bowl, The End. No art there. :/ Still, teenage boys will eat anything ...

Scrumptious! We made banana loaf a few week's back and Sophie is a real fan - but we didn't add any chocolate - oooo, how she would love that. I doubt it would last for 5 day's with that magic ingredient in the mix! Loving the photos too - such comedy in the kitchen!
