Parmesan Chicken Breasts with Crispy Posh Ham by Jamie Oliver

Ingredients
30g Parmesan cheese

2 sprigs of fresh thyme

2 skinless chicken breasts

ground black pepper

1 lemon

6 slices of prosciutto

olive oil

Chicken prep

Grate the parmesan and pick the thyme leaves off your stalks. Carefully score the underside of the chicken breasts in a criss-cross fashion.



Season with a little pepper, and sprinkle with the thyme leaves. Grate some lemon zest over the top.



Sprinkle with the parmesan cheese. Lay 2 or 3 prosciutto slices on each breast and drizzle with a little olive oil.



Put some clingfilm over the breasts and bash them until they are about 1cm thick. Kyla really got into the bashing!


To Cook

Heat pan to a medium heat. carefully transfer the chicken breasts into the pan, prosciutto side down. Drizzle over some olive oil. Cook for 3-5 minutes on each side.

Rog didn't skip a beat with this one...Jamie Oliver! Lol. He enjoyed it a lot, but found the lemon a bit different for his palate. Thus far it's his second favourite. One more night to go, and he's trying to convince us we need to do another week.
